Spring is here, which is not least noticeable on everything that begins to sprout.
​One of the many favorites among the things most people call weeds is Ground elder. The Ground elder is a medicinal plant and is said to help against gout. It holds a lot of nutrition and is now also sold in some stores which is fun. Ground elder can be used for a lot. You can use it both fresh, frozen and dried. Frozen and dried, it is best served in bread or wok. Fresh there are a lots of recipes to use this rather insignificant plant to. I myself bake, eat in salad, like spinach (stewed), in soup, pesto and much more. Recipes for pesto and much more can be found under recipes. /Good luck with the forest pantry
